Where is collagen found?
Collagen makes up about 30% of all proteins in the human body and is therefore the most important structural protein. It is present in greater amounts in virtually all organs and tissues, including bones, ligaments, cornea, tendons, and skin. Twenty-eight different types of collagen have been identified in vertebrates; the skin contains type I and III collagen, and cartilage contains type II and III collagen. Since collagen is the main component of the extracellular matrix, it is essential for strengthening, regulating and regenerating this tissue. Collagen also accounts for 65-80% of the dry weight of tendons, and collagen bonds help the tendon structure to support load resistance. For this reason, collagen is of great importance in maintaining tendon function and neutralizing the possible risk of injury during physical activity (2). Collagen, the most abundant component of the extracellular matrix, is a protein that determines the physiology of the skin. The structure of collagen resembles a rope - three chains wrap around each other to form a triple collagen helix. These building blocks combine to form collagen fibrils with tremendous strength and tensile strength (3).
Types of collagen
Collagen is characterized by a high concentration of three amino acids - glycine, proline and hydroxyproline, which form its aforementioned characteristic triple helix. Hence, collagen is enzymatically hydrolyzed, breaking it down into smaller bioactive peptides (the primary complementary form of collagen) that are readily absorbed in the digestive tract before entering circulation. Due to hydrolysis, collagen peptides do not have gelatin gelling properties and are soluble in cold water. Currently, the sources of collagen peptides are hydrolyzed bovine, pork, sea and poultry collagen (2).
